Located in the charming village of Mareuil-sur-Aÿ, on a big plot bordered by Rue Carnot, Rue du Commerce and Rue Corbier, the beautiful domaine Billecart-Salmon is a testament to the family’s dedication. Beyond the elegant family home, a collection of pristine buildings, each whispering tales of generations past, serve as the heart of their administrative and winemaking operations. A meticulously maintained garden adds a touch of tranquillity, while the depths of their cellars hold the secrets of their exceptional cuvées. Just a short distance away, at 26 Boulevard Nicolas François Billecart, lies the entrance to the legendary Clos Saint-Hilaire. This vineyard, a true gem of the region, is a testament to the family’s commitment to quality.






After touring the beautiful grounds, we were invited to explore their incredible cellars. These underground tunnels, stretching for 2 kilometers, were built mainly during the 17th and 19th centuries.
Over the time, we’ve seen many outstanding champagne cellars, and these are nothing less. The dim lighting creates a magical atmosphere, and the rows of perfectly stacked bottles are a sight to behold. The smell of wet chalk and the sound of our footsteps add to the mystique. It’s truly a unique experience.





After the beautiful visit of the cellars, we were invited for an interesting tasting:
- Billecart-Salmon Blanc de Blancs Brut Grand Cru NV;
- Billecart-Salmon “Louis Salmon” Blanc de Blancs millésime 2012;
- Billecart-Salmon “Brut Sous Bois”.




Even if we previously had tasted the “Brut Sous Bois” and the Blanc de Blancs NV, the “Louis Salmon” Blanc de Blancs 2012 was a first time and a very pleasant surprise. Elegant, crisp but complex, it was, in our perception, undoubtedly the winner of the tasting.

Our visit to Billecart-Salmon was fascinating! We learned so much about their history, philosophy, and winemaking techniques. And of course, we enjoyed a great tasting!
